Neat Loaf (a holiday tradition in the Coxon household)

from the Peaceful Palate by Jennifer Raymond (1992). 

I food process these four ingredients to make them finely chopped:

1 cup finely chopped walnuts

1 finely chopped onion

1/2 finely chopped red bell pepper

2 finely chopped medium carrots

 

2 cups of brown rice 

1 cup wheat germ

1 cup quick-cooking rolled oats

1/2t each: thyme, marjoram, and sage

2T soy sauce (I prepare mine soy-free by just using 2t of salt)

2T stone ground mustard

BBQ sauce or ketchup

 

 

Preheat oven to 350F

 

Combine all ingredients except BBQ sauce or ketchup and mix with a large spoon.

 

Pat into an oiled loaf pan (standard 5x9)

 

Top with BBQ sauce or ketchup

 

Bake for 60 minutes

 

Let stand 15-20 minutes.

 

Knife around edges.

 

I place the serving plate on top, then turn it over to get it out without letting it break.

 

We think it goes well with our traditional stuffing, mashed potatoes, and gravy.

 

I'd say it serves 6 hungry people two slices. The book suggests 8-10.
