Krystal’s Pupusas

 

4 cups of Maseca (a corn flour available in the Mexican section of most grocery stores)

2 t ground cumin

1 t baking powder

1 t salt

Any of the following:

˝  cup refried beans (we used Amy’s brand refried black beans)

˝ cup Dayia cheese

1 small can of diced green chilies

 

1. Mix the Maseca, cumin, baking powder, and salt in a large bowl and add 3 cups of warm water to form a soft dough.

2. Let the dough sit, covered by plastic wrap or a wet towel for 30 minutes.

3. Divide the dough into 16 balls.

4. Open each ball, add about 1 T of filling (Dayia, beans, and/or green chilies—combos are great, too).

5. Close the ball back up.

6. Smoosh into a thick pancake shape, about 3-4 inches around.

7. Pan fry in plenty of vegetable oil on medium high heat until golden (about 3 minutes per side).

8. Keep them hot on a plate in a 170F oven.

9. Sprinkle with salt. Serve with Sour Supreme, salsa, and shredded cabbage.
