My wife was recently featured in a local magazine: Vegetarian for Health and Conscience
Here are some of my favorite you-friendly, Earth-friendly, and animal-friendly recipes:
Black bean enchilada (Tex-Mex at its best)
Black bean soup (Makes cold days warm)
Bread (Simple, white, yeast bread)
This is the recipe I used when my class baked bread each year: A great lesson
in measuring, economics, sharing, and living systems (yeast and, later, mold
are both fungi).
Bread (Slow rise)
Carrot bisque (Krystal's favorite soup)
Chocolate chip cookies (Classic)
Chocolate pie (Protein rich, low fat, super chocolate, and kids love it!)
Dahl, yellow (lentil soup) (Classic Indian)
Fried rice (If I could only have one food for the rest of my life, this would be it.)
Green goop (Awesome tempeh dish from my college roomie, Kelly)
Kale chips (Delicious, crispy, and nutritious)
Lasagna, roasted cauliflower (You will not miss the dairy)
Neat loaf (A holiday classic)
Pizza crust (Pizza for the grill, from Kerry and Karen)
Pot Pie (If you are what you eat, I am this pot pie)
Pupusas (Krystal shows off skills picked up in the Peace Corps in Honduras)
Ribwich (Not only better for you and pigs, but better tasting, too)
Salsa (AKA: What to do with ugly tomatoes)
Stir fry, live (So healthy and so tasty!)
Thai red curry (I studied cooking in Thailand, you know.)
